Achappam (derived from “achh,” meaning mould, and “appam,” meaning a flour-based food) is a deep-fried rose cookie made primarily with rice flour and egg, commonly found in Kerala and other regions of South India. This iconic Kerala snack is believed to have its roots in Dutch influence and has gained popularity across Southeast Asia, where it is known by various names, including kuih loyang (brass), acuan (mould), cap (stamp), bunga ros (rose flower), bunga durian (durian flower), goyang (shake), kembang loyang, and dok jok (water lettuce). Characterized by its delicate flower-like shape, Achappam is mildly sweet, crispy, and widely available in teashops and snack stores throughout South India.
